    A neighbor in Texas made this and it's as good as any we've had in New Orleans. Like so many shrimp dishes, this is quick and fit for guests.

    List of Ingredients




    2 cups onion, chopped
    1 can tomato sauce
    1 green pepper, chopped
    2 pounds medium shrimp, peeled
    1/2 cup celery, chopped
    1/4 teaspoon fresh ground
    1 tablespoon salt pepper
    1/4+ teaspoon cayenne
    1/2 cup water
    2 tablespoons parsley
    1 bunch green onions, chopped

    Recipe



    Make a roux with 1/3 cup oil and 1/4 cup flour. Stir constantly until medium brown. Add chopped onions, pepper, and celery. Cook, stirring constantly, until onions are transparent. Add tomato sauce, salt, pepper, and cayenne. Add water. Cook about 45 minutes over low heat. Add shrimp. Cook about 15 minutes. Add parsley and green onions. Cook another 10 minutes. Serve over rice.
