Recipe Introduction
Mamma used to make this when Dick was growing up. Several years ago, I made it for the first time. John adored it.
List of Ingredients
3 tablespoons butter
2 tablespoons flour
1 cup milk (or 1/2 cup milk and 1/2 cup white wine)
1 pound shrimp
1 package frozen peas
1 egg yolk
1 teaspoon lemon juice
1/2 cup chopped ripe olives
2 tablespoons chopped almonds
Recipe
Make a cream sauce by melting butter and blending in flour and adding liquid. Remove from stove and cool slightly. Stir in egg yolk. Add other ingredients. Place in buttered casserole. Cover with breadcrumbs and dot with small pieces of butter. Bake at 350 for about 30 minutes. Serves 4.
When I made it for John, I substituted cream of celery soup for the white sauce. Byron has discouraged us from using creamed soups because they are full of fat and sodium. Now I'm back to the white sauce, but I retain the celery flavor by sauteing 1/4 cup minced celery and a little minced onion to add to the mixture.
