Recipe Introduction
There's a lovely little restaurant in Slidell, LA, called, I think, the Black Bull. The service is quick and friendly in spite of the restaurant being fairly fancy. The food is consistently excellent. We've never had anything less than at least a 9 on our scale of 10. The Shrimp and Eggplant Casserole is my favorite. I played with several recipes until I found one that I think rivals theirs.
List of Ingredients
Another New Orleans specialty. We found it first in Slidell. This is a combination of several recipes.
2 eggplants (peeled, cubed, parboiled in salted water, rinsed, and drained)
2 onions, chopped fine
2 cloves garlic, minced
2 ribs celery, minced
1 bell pepper, chopped fine
1 can diced tomatoes
1 can Rotel
2 teaspoons lemon juice
1 teaspoon marjoram
Salt and pepper
Pinch cayenne
1 pound shrimp, cut up
1 cup soft bread crumbs
1/2 cup+ Parmesan
2 eggs, slightly beaten
Dash Tabasco
Recipe
Mash eggplant. Sauté raw vegetables until tender. Mix all
ingredients together. Pour into buttered
casserole. Bake about 350 about 45 minutes.
