    Dick's Favorite Chili Casserole

    When Dick says to add a recipe to my repertoire, I know it's OK. He loves this and I don't make it often enough.


    List of Ingredients


    • About 3 cups leftover chili
    • 1 cup sharp cheddar cheese, grated (or more)
    • 1 recipe Our Favorite Cornbread or Mexican Cornbread, if you can take the heat
    • chopped onion
    • sour cream


    Instructions


    1. Spray a deep casserole dish with cooking oil. Place chili on bottom and top with cheese. Pour cornbread batter on top.
    2. Bake at 375 degrees about 45 minutes or until a knife inserted in the center comes out clean.
    3. Serve with chopped onions and sour cream, if desired.


    Final Comments


    In a REAL pinch, I've used canned chili (another of my secret weaknesses)or just plain chili beans in place of my homemade chili.
