    Mexican Casserole

    This is one of those easy Hamburger-Helper type meals. We made a lot of these back in the '70's when we needed to get the most out of a pound of hamburger. Heaven knows what fat and sodium we consumed.


    List of Ingredients


    • 1 pound ground beef
    • 1 chopped onion
    • 1 chopped pepper
    • 4 tablespoons chili powder
    • 1 can tomato sauce
    • 1 pound grated sharp cheddar cheese, divided
    • 1 egg
    • 1 pint sour cream
    • 2 packages refrigerator biscuits


    Instructions


    1. Saute ground beef, onion, pepper and chili powder. Stir in tomato sauce. Remove from heat and add 1/2 pound grated cheese, the egg, and sour cream.
    2. Split 1 package biscuits crosswise. Place on bottom of a greased 9x13-inch baking dish. Cover with meat mixture. Top with another package split biscuits. Sprinkle remaining cheese on top. Bake at 350 degrees about 30 minutes.
