Rio Grande Casserole
List of Ingredients
I cannot remember where I found this recipe, but it's good and quick.
Brown:
1 1/2 pounds ground beef or venison
1/2 cup bell pepper, chopped
1 onion, chopped
Add: 1 can chopped green chiles
Grease baking dish and layer:
2 cups cottage cheese
4 ounces black olives (opt.)
8 ounces green enchilada sauce
1/2 cup cheddar cheese
1/2 cup Monterey Jack cheese
2-3 cups tortilla chips, broken up
Recipe
Top the cottage cheese layer with the meat mixture. Bake at 350 degrees about 30 minutes.
Serve with guacamole, sour cream, and diced tomatoes.
