    I have finally figured out how to make tacos somewhat like the ones we find in inexpensive (CHEAP) Mexican cafes--the ones that serve typical Tex-Mex, not the new classy ones that cater to the Yuppie trade. The trick is mince, mince, mince and mash, mash, mash.

    1 pound ground beef
    1 onion, very finely chopped
    1 clove garlic, minced
    2-3 tablespoons chili powder

    1 can refried beans (or homemade*)
    chopped onion
    chopped tomatoes
    shredded lettuce (that nasty old iceburg, of course)
    sharp cheese, grated
    corn tortillas (packaged or home-formed)
    salsa
    sour cream

    To make taco shells from soft tortillas, a taco form is almost a necessity. Heat 2-3 cups oil in a large cast iron skillet or deep fryer. Place tortilla in taco form and fry 1-2 minutes until crisp.

    *To make refried beans from scratch, mash cooked pintos with a potato masher. Saute a little minced garlic and finely chopped onion until soft. Bacon grease is almost a must here. Stir in 1-2 cups mashed beans. Heat through.

    To make meat mixture for tacos, preheat frypan until hot. Add ground beef and mash with a fork. The trick is to mash enough so that there are absolutely no lumps left. Add minced onion, garlic and the chili powder. Fry until onions are completely incorporated.

    To serve, spoon meat mixture into taco shell. Add refried beans. Top with raw onion, tomatoes, lettuce and cheese.
    Add a little salsa and sour cream.
