Green Chile Stew
List of Ingredients
Brown 1 pork roast on all sides.
Saute 2 onions in a little oil. Add 2-3 cloves garlic.
In crockpot, pour in:
2 cans green enchilada sauce
2 cans tomatoes (1 Rotel)
3 cans green chiles
1 t. cumin
1 t. oregano
4-6 potatoes, cut in 1/2” cubes
Add onions and pork roast. Cook overnight. The meat should be falling off the bones and the potatoes should be very soft. Thicken with Wondra flour, if necessary.
Alternately, cook 3-4 hours in Dutch oven on top of stove.
Pork loin may be used. Most recipes call for frying pork cubes instead of using the whole roast.
Serve over rice.
