Jean's Sauerkraut and Pork
List of Ingredients
This is my sister Jean's version of sauerkraut and pork. It may have fewer calories than Mom's if the roast is well-trimmed. The kraut absorbs the pork drippings and has a somewhat milder flavor.
Jean likes this roast to cook several hours. She starts it in the mid-morning. When I do this version, I roast mine about 3 hours.
Recipe
Take 2-3 cans sauerkraut and pour into covered roasting pan. Place a 4-5 pound pork roast on top. Roast at 350 degrees 3-4 hours. Add a little water if it becomes dry.
See Mom's Sauerkraut and Pork for accompaniments. Jean likes applesauce with this, too.
Alternate version: Mix sauerkraut, 1 cup water, 1/2 teaspoon white sugar, and 1 teaspoon brown sugar. Place in roasting pan. Place pork loin on top. Bake at 425 degrees for 40 minutes. Cover. Reduce heat to 300 degrees. Roast about 3 more hours.
This version is very tender and the sugars bring out the flavor of the sauerkraut.
