Recipe Introduction
I found this recipe when I was looking for healthy bars that were SBD-appropriate. This has a bit too much sugar, but it's high in fiber. It also tastes great. I only make the bars when I've been otherwise good.
These are easily varied.
List of Ingredients
3/4 cup each: walnut halves and whole almonds,(toasted)
1 1/2 cups Kashi puffed cereal
1 1/4 cups oatmeal
1 cup dried cranberries,chopped
1/2 cup each: other dried fruits, chopped
1/2 cup oat bran or wheat bran
3 tablespoons finely chopped crystallized ginger or candied orange peel
1 cup white Karo syrup
1/4 cup turbinado
1/2 teaspoon salt
1 teaspoon vanilla
Recipe
Conbine cereal, oatmeal, oat bran, cranberries, other dried fruits, and ginger. Toss well.
In a small saucepan, combine Karo, turbinade sugar and salt. Bring to a boil over moderate heat. Cook, stirring occasionally, until the mixture is slightly thickened, about 5 minutes. Remove from heat and stir in the vanilla.
Slowly pour the syrup into the dry ingredients and toss to coat thoroughly. Transfer the warm mixture to the baking dish and pack firmly with moistened fingers. Cool at least 45 minutes before cutting into 16 bars. (I cut them smaller into about 1-inch squares.
These do not do well at room temperature. I store then in square plastic containers, separating the layers with plastic wrap or waxed paper. Freeze or keep refrigerated.
