Lamb Stews
List of Ingredients
Version 1:
Use lamb stew meat, if you can find it, or breast of lamb, cut into serving pieces. Brown floured pieces in hot oil on all sides. Cover with 1-2 c. water and simmer until meat is very tender, about an hour.
Add potatoes, carrots, and onions (turnips, too). Simmer 30-45 minutes. If desired, serve over rice.
Version 2:
Use stew meat or breast of lamb as above. After browning meat, saute 2-3 chopped onions and 2 cloves garlic, minced. Cover with water and bring to boil. Add 1/2-1 c. barley.
Cook 45 minutes to an hour until barley is tender. Check pot every 15-20 minutes. Add more water, if necessary.
Mushrooms may be added along with the onions and garlic.

These are stews I've done over and over. We love lamb and cannot understand why it's so hard to find here in the south. When we first married, leg of lamb was 69 cents a pound. We had it often. Now it's an occasional treat.
