    Lamb and Okra Stew

    List of Ingredients




    1 lg. pkg. frozen okra (1 1/2 lbs. fresh)
    3 cloves garlic, crushed
    1 t. ground coriander (I use 1/2 t.)
    2 T. butter
    2 lbs. lean lamb, cubed
    1 lg. can tomatoes
    1 1/2 c. chicken broth (1 can)
    S & P
    2 T. lemon juice

    Saute garlic and coriander in butter in large frypan. Add lamb and brown on all sides. Add okra and tomatoes. Simmer 10 minutes. Season with salt and pepper. Stir in broth and simmer on low heat until thick and saucy--2-3 hours. Add lemon juice (if you remember) just before serving. Serve over rice.

    We discovered this dish in 1990 in a wonderful neighborhood Greek restaurant in Rockville, MD. I searched for weeks to find a recipe that was similar to that one. This makes enough for several meals, well 2-3, anyway. We almost lick the bowl to get every last bit.
