Patsy's Hot Pear Relish
Growing up in the north, we had good Bartletts every fall. I can't remember not having a pear tree in the yard. When I came south, I was appalled at the cannonballs that passed for pears. Cooking pears, that's what they are and they have to be heavily seasoned to be fit to eat. In fact, I don't know why people bother.
Patsy brought us a jar of this and then finagled the recipe from a friend. This is delicious with pork, turkey, or chicken. As far as we can see, this is the only thing to do with southern pears.
List of Ingredients
- 4 quarts pears, ground
- 6 onions, chopped
- 8 bell peppers, chopped
- 2 jalapenos or more, minced
- 1 can pimentos
- 4 cups sugar
- 4 tablespoons salt
- 8 tablespoons flour
- 2 tablespoons turmeric
- 1 1/2 quarts vinegar
Instructions
- Combine ingredients. Cook until soft, about 25 minutes, stirring constantly. Ladle into clean, hot jars. Cover with hot lids. Boil in hot water bath 10 minutes.
