Mamma's Tahiti Lime Pie
From Mamma's notebook. She made a note that she had this November 25, 1988--Thanksgiving. I don't know if she served it or had someone else's. Few of her recipes have dates. It took me years to learn to date them. Wish I'd started doing it when I was a young bride. We'd never have served poor old Paul W. burned, I mean grilled, chicken twice in a row.
List of Ingredients
- 1 1/2 cups sugar
- 1/3 cup cornstarch
- 3 eggs, separated
- 1/3 cup lime juice and pulp
- 1 lime rind, grated
- 1 tablespoon butter
- 1 drop green color
- 3 tablespoons granulated sugar
- 1 cooled pie crust
Instructions
- Mix sugar and cornstarch in a sauce pan, stirring constantly to avoid lumps; cook until mixture is thick and clear, about 1 minute.
- Blend part of hot mixture into beaten egg yolks, then combine with remaining hot mixture.
- Cook 1 minute longer over low heat, stirring constantly. Remove from heat; add juice, rind, butter and coloring.
- Cool thoroughly, stirring occasionally. Pour into shell.
- Beat egg whites until stiff; add 6 tablespoons sugar one tablespoon at a time, beating well after each addition. Spread meringe over pie.
- Bake at 375 deprees for 12 minutes.
