    Rice-Stuffing

    List of Ingredients







    2 - 2 1/2 cups cooked white or brown rice or 1 pkg. wild rice mix, prepared as directed
    1 cup chopped apple
    1/2 cup chopped dry prunes or raisins
    1/2 cup chopped dried apricots
    1 stalk celery chopped
    1/2 onion chopped (optional)
    1 clove garlic, minced
    1/2 teaspoon grated lemon rind
    1 teaspoon ground ginger
    1/2 teaspoon salt
    1/2 stick oleo, melted
    1/2 cup chicken broth

    Recipe



    Saute celery, onion and garlic in oleo inlarge saute pan. Turn off heat. Add remaining ingredients. Stir to combine.
    Stuff chicken or turkey or game hens or whatever. Pork chops are nice, too.

    Bake at 350 degrees for 1 1/4 -1/2 hrs. Place remaining stuffing in Pammed (greased) casserole. Bake in oven the last 15-20 minutes.

    Note: Any of the baked chicken sauces go well on Cornish hens. The Thai sauce is especially tasty
