Christmas Tossed Salad
When everyone comes home for the holidays, we turn Christmas dinner into a party. This is one of the salads we've come to enjoy.
List of Ingredients
- 1 head Romaine or mixed greens
- 1 package spinach, stemmed
- 1 small jar capers
- 1/4 pound feta cheese, crumbled
- 1/4 pound Swiss cheese, julienned
- 2 cups roasted nuts, preferably walnuts or pecans
- 1/2 cup dried cranberries
- 2 tablespoons toasted sesame seeds
- Dressing:
- 1 cup mayonnaise, low-fat
- 1 cup buttermilk
- 1/2 cup low-fat sour cream
- 1 bunch green onions, minced
- 1 clover garlic, minced
- 3-4 tablespoons fresh parsley
- 1/2 teaspoon onion salt
- Topping:
- 6 slices bacon, fried and crumbled
- 2 cups home-made croutons
- 2 tablespoons grated Parmesan cheese
Instructions
- In a large bowl, toss first 8 ingredients (Romaine through cranberries) together.
- Make dressing with next 7 ingredients (mayonnaise through onion salt). Pour over salad in bowl.
- Top with crumbled bacon and croutons. Sprinkle Parmesan cheese overall.
Final Comments
This salad is also good undressed with several dressings available for diners to choose. I like honey-mustard, Catalina, or a garlic vinaigrette.
