    Congealed Pineapple-Carrot Salad

    Recipe Introduction


    A lovely girl named Rae gave me this recipe when we lived in Iowa. I like to make it for the holidays.


    List of Ingredients


    • 2 packages orange gelatin
    • 2 cups boiling water
    • 1 cup miniature marshmallows
    • 1 small package cream cheese
    • 1 can crushed pineapple
    • 1 cup shredded carrots
    • 1 small carton whipped topping
    • 1/2 cup mayonnaise


    Instructions


    1. Dissolve gelatin in boiling water. Add marshmallows and cream cheese. Stir until dissolved.

    2. Add remaining ingredients. Continue stirring until whipped topping is incorporated. Chill until set.



    Final Comments


    This is a good recipe for a bridge luncheon.
