Cucumbers with Sour Cream

Mom always harvested more cucumbers than we could ever use--even when the garden was Mom-size (Dad's favorite term). This was her fancy-for-company salad. Dick's not wild about cucumbers. I like this so much, I make it just for me.





List of Ingredients



• 1-2 cucumbers, sliced wafer-thin
  
• 3-4 green onions and tops, sliced (or 1/2 mild onion, sliced)
  
• Sour cream
  
• Salt and pepper
  
• Sugar, if desired
  
• 1 teaspoon dill weed (opt.)
  






Instructions



1. Prepare vegetables. Mix all ingredients together. Serve fairly soon after preparing this salad. The cucumber tends to weep and the sour cream becomes watery.
   






Final Comments


Nice as the crunch in a ham sandwich or wrap. Add a little horseradish and try a sandwich with sliced roast beef.
