Leslie's Cobb Pasta Salad
Leslie has always had a good palate, i.e., she instinctively knows what combinations produce good results. She loves to make this for those occasions when everyone brings a dish. Her first effort had a package of bacon cooked and crumbled. That was not only too fattening, but it tended to overwhelm the taste.
List of Ingredients
- 1 pound wagon wheel pasta, cooked (or other macaroni-type pasta)
- 2 cups cooked chicken
- 3-4 slices bacon, fried, drained and crumbled
- 2 cups shredded fresh spinah
- 1 cup sliced black olives
- 1/4 pound blue cheese, crumbled
- 2 tomatoes, diced
- Dressing:
- 1 teaspoon Dijon
- 1/4 cup+ red wine vinegar
- 1/2 teaspoon pepper
- 1 teaspoons garlic
- 1 teaspoon sugar
- 1/2 cup olive oil
- 1/4 cup water or chicken broth, as needed
Instructions
- Mix dressing ingredients. Set aside. Combine remaining ingredients in a large bowl. Pour dressing over salad.
Final Comments
Notes: Turkey and ham with or instead of the chicken are nice. Feta cheese may replace blue cheese. Bottled vinaigrettes may replace salad dressing. I prefer Kalamata or green olives to black olives.
