Mahmut Erdir's Eggplant Salad
Mac Erdir came to the Alabama office in an exchange program with Turkey. We sort of adopted him for the several weeks he was in this country. Like us, he was young and newly married. He was a little homesick, I think, and when he taught us his family's recipes, he felt a little closer to home. This is one of our favorite salads.
List of Ingredients
- 1 eggplant
- 1 bell pepper
- 2 cloves garlic
- 2 tomatoes, cut in wedges
- Juice of 1 lemon
- Salt and pepper
Instructions
- Place eggplant and pepper on hot coals in grill or roast under the broiler in the oven. Place in a paper bag to steam a few minutes. Peel. Mash eggplant; chop pepper.
- Place eggplant and pepper on a serving plate. Drizzle with oil and lemon juice. Chill slightly. Serve with wedges of tomato.
Final Comments
In reality, this is a simple version of caponata. We were amused when charring peppers and eggplant and other vegetables came into vogue. We'd been doing it for years.
