Mom's Pepper Slaw
Mom always made this in the summer, probably because that's when we could get good green peppers. It's on the vinegar-y side and has practically no calories.
List of Ingredients
- 1 head cabbage, finely shredded
- 1 green bell pepper, chopped rather fine
- 1-2 tablespoons onion, chopped
- 1 carrot, finely shredded
- Dressing:
- 1/4 cup cider vinegar
- 1-2 tablespoons sugar
- Salt and pepper
Instructions
- Combine vegetables. In a small bowl, combine ingredients for dressing. Pour over vegetables. Chill and serve.
Final Comments
This is a nice alternative to creamy slaws. The big bonus is that it's fat-free.
