    Mom's Summer Salad

    We only make this with garden fresh tomatoes and home-grown cucumbers.


    List of Ingredients


    • 2-3 ripe tomatoes, chopped in fairly large chunks
    • 1 large onion, quartered and then sliced
    • 2 cucumbers, thinly sliced
    • 1/2 cup cider vinegar
    • 2-3 tablespoons water
    • 1 tablespoon sugar
    • Salt and pepper to taste


    Instructions


    1. Prepare vegetables. Mix remaining ingredients together for dressing. Pour over vegetables. Mix. Chill.


    Final Comments


    No fat. My ultimate diet comfort food.
