My Antipasto
A take-off on Mom's summer salad. This grew out of the need to use excess garden produce. John loved it.
List of Ingredients
- 3-4 ripe tomatoes, cut into chunks
- 1-2 cucumbers, sliced
- 1-2 large onions, chopped or sliced
- 1-2 green bell peppers, chopped
- 1-2 Anaheim hot chiles, chopped fine
- 2-3 stalks celery, sliced
- 1/2 cup green olives, halved
- 1/2 cup Italian dressing
- 2-3 tablespoons wine vinegar
- 1 teaspoon sugar
- Salt and pepper to taste
- Optional additions:
- radishes, sliced
- yellow squash, chopped
- zucchini, chopped
Instructions
- Toss vegetables in a large bowl. Mix Italian dressing, vinegar, sugar, salt, and pepper. Pour on top. Let stand an hour or so for flavors to blend.
Final Comments
The quantities above will easily serve 8. Cut amounts to feed fewer people.
Chop vegetables in a finer dice and this becomes good filling for whole wheat wraps. Add a little ham or pepperoni, if desired.
