My Celery Salad
I invented this in February 2000. I'd searched my books and the internet and could not find a recipe that sounded good. Of course, after I put this together, I found several similar.
List of Ingredients
- 10-12 ribs celery, cut in ample 1/2" dice
- 1 cup fresh parsley, minced
- 2 tablespoons capers
- 3 green onions, sliced on the diagonal
- 1-2 tablespoons fresh basil
- 1-2 teaspoons fresh oregan
- 1 package feta cheese, crumbled (3 ounces)
- 1/4 cup Italian dressing
- Squeeze of 1 lemon
- Arugula
- Tomatoes
- Hard-cooked eggs
- Anchovies
Instructions
- Mix first nine ingredients (celery through lemon juice). Chill about an hour.
- Arrange several leaves of arugula on a salad plate. Spoon celery salad on top. Garnish with tomato wedges, hard-cooked eggs, and 1-2 anchovy fillets.
Final Comments
Romaine lettuce is a good substitute for arugula and available year-long. Omit anchovies if diners do not like them. Substitute blue cheese for feta, if desired.
