My Creamy Slaw
In contemporary speech shortcuts, this is a have-to go-with for fish.
List of Ingredients
- 1/2 head cabbage, finely shredded
- 1 carrot, grated
- 2-3 tablespoons grated onion
- 1/2 cup celery, finely chopped (opt.)
- 2-3 tablespoons pickle relish
- Dressing:
- 1/2 cup yogurt
- 1/2 cup low-fat mayonnaise
- Pinch salt
- 1-2 tablespoons lemon juice
- Buttermilk to thin to desired consistency
- 2 teaspoons sugar
- A little pickle juice, to taste
Instructions
- Combine shredded vegetables in large bowl. In a separate bowl, mix dressing ingredients together. Combine dressing with vegetables. Chill.
Final Comments
It has taken years to find this dressing combination.
The vegetables should be shredded with a salad maker or in the food processor. Fine shredding will make the salad juicier. While that's not desirable in some slaws, it's necessary in this recipe.
