My Favorite Salad Dressing
This was my favorite dressing in my pre-Balsamic vinegar days. All I needed were a few greens, a slice of onion, a slice of tomato and this dressing to meet all my salad cravings. Unfortunately, it was high in sodium and fat. That's probably why it was so good.
List of Ingredients
- In the food processor, mix together:
- 1 bunch green onions with tops
- 1/2 teaspoon salt
- 2 teaspoons pepper
- 3 tablespoons fresh parsley
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 tablespoons anchovy paste
- 1/3-1/2 cup green olives
- 1/4 cup Parmesan cheese
- 2/3 tablespoons lemon juice
- 1 teaspoon sugar
- 1 1/2 cups vinegar
- 1/2 teaspoon tarragon
Instructions
- Slowly drizzle in 1 1/2 cups oil. Process until smooth.
Final Comments
This is supposed to keep 2-3 weeks in the refrigerator. It never lasts that long, even though only a small amount is needed.
