    My Macaroni Salad

    This salad kind of grows, depending on what's available.


    List of Ingredients


    • Basic ingredients:
    • 2 cups cold cooked pasta
    • 1 small onion, minced
    • 1/2 cup celery, chopped (or more)
    • 1-2 tablespoons pickle relish
    • 2 hard-cooked eggs
    • 1/2 green pepper
    • Dressing:
    • 1 part mayonnaise to 2 parts plain yogurt
    • pinch sugar
    • 1/2 teaspoon mustard, plain or Dijon
    • Optional additions:
    • sliced radishes, sliced black olives, pimentos, sliced cucumbers, grated carrots, and tomato wedges
    • Other occasional additions:
    • 1 can water-packed tuna, drained
    • 1 can peas, drained or 1/2 package frozen peas, thawed
    • 1 cup cooked chicken, turkey, or ham
    • 1/2 cup sharp cheese, cubed
    • On rare occasions, also add:
    • sliced zucchini, par-boiled broccoli, olives, yellow squash


    Instructions


    1. Combine dressing ingredients. Mix into salad ingredients. Chill.



    Final Comments


    Notes: When I add several optional ingredients, I often change the dressing to a vinaigrette or bottled Italian dressing.

    When using mayonnaise, use less rather than more. To me, this salad is more pleasing when it's slightly dry.
