My Macaroni Salad
This salad kind of grows, depending on what's available.
List of Ingredients
- Basic ingredients:
- 2 cups cold cooked pasta
- 1 small onion, minced
- 1/2 cup celery, chopped (or more)
- 1-2 tablespoons pickle relish
- 2 hard-cooked eggs
- 1/2 green pepper
- Dressing:
- 1 part mayonnaise to 2 parts plain yogurt
- pinch sugar
- 1/2 teaspoon mustard, plain or Dijon
- Optional additions:
- sliced radishes, sliced black olives, pimentos, sliced cucumbers, grated carrots, and tomato wedges
- Other occasional additions:
- 1 can water-packed tuna, drained
- 1 can peas, drained or 1/2 package frozen peas, thawed
- 1 cup cooked chicken, turkey, or ham
- 1/2 cup sharp cheese, cubed
- On rare occasions, also add:
- sliced zucchini, par-boiled broccoli, olives, yellow squash
Instructions
- Combine dressing ingredients. Mix into salad ingredients. Chill.
Final Comments
Notes: When I add several optional ingredients, I often change the dressing to a vinaigrette or bottled Italian dressing.
When using mayonnaise, use less rather than more. To me, this salad is more pleasing when it's slightly dry.
