Our Waldorf Salad
List of Ingredients
This must have been the rage during the Waldorf's heyday back in the '20's. Mom has always made it, but we're fussy about the apples. Only Jonathons, Galas, Fujis or other tart varieties will do. We usually only make it in the fall when those crisp apples are available. Serve chilled.
3-5 apples, unpeeled and chopped
1/2 cup raisins
1/2 cup celery
1/4 c. chopped walnuts (pecans will do, but walnuts are better)
1/2-3/4 c. red grapes, halved
1 banana, sliced (opt.)
1/2 cup Miracle Whip*
dash salt
dash lemon juice
1 T. sugar
Recipe
Combine salad dressing, salt, lemon juice, and sugar for dressing. Set aside.
Combine remaining ingredients in a large bowl. Stir in salad dressing.
Note: *I now use equal parts low-fat mayonnaise and fat free yogurt or sour cream for the dressing.
Craisins are a good substitute for raisins.
