Safe Caesar Dressing
This uses tofu instead of raw eggs, a good idea with all the bacteria supposedly present in today's eggs. We find this highly acceptable, probably because it's fairly high in calories--@ 173 per serving. Some calories may be saved if only 1 - 1 1/2 tablespoons per serving are used.
List of Ingredients
- 1 package soft tofu
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 can flat fillets of anchovies, undrained
- 2 tablespoons red wine vinegar
- 2 tablespoons grated Parmesan
- 1 tablespoon Dijon mustard
- 1-2 cloves garlic, pressed
- 1/2 teaspoon pepper
Instructions
- Process all ingredients together until smooth.
