Salad Greens with Curry Dressing
When we lived in Texas in the '60's, we often went to a Polynesian restaurant. The dressing for this salad is my version of the one I always ordered there.
List of Ingredients
- 4 cups assorted greens
- 1 bunch green onions, sliced thin
- 2-3 tablespoons roasted peanuts
- 12 cherry tomatoes, halved
- Sesame seeds, toasted (@1/4 cup)
- Dressing:
- 1/2 cup mayonnaise
- 1/2 cup plain yogurt
- 1-2 teaspoons curry powder
- A few drops lemon juice
- Sugar, if desired
Instructions
- Toss greens, onions, peanuts, cherry tomatoes, and sesame seeds in a large serving bowl. Mix together dressing ingredients. Toss with salad vegetables. Serve immediately.
Final Comments
A few cucumber slices may be added. As I recall the salad at the restaurant, it was fairly standard. It was the dressing and the toasted sesame seeds that made it special. Back in the '60's that was quite exotic.
