Southern Copper Pennies
List of Ingredients
2 pounds carrots, peeled and cut into thin rounds
2 bell peppers, chopped
2 onions, chopped
1 cup sugar
1 tablespoon Worcestershire sauce
3/4 cup vinegar
1 teaspoon mustard
1/2 cup oil
1 can cream of tomato soup

Nita often makes this for Leslie. She's addicted to it.
Cook carrot rounds in boiling water until just barely tender. Toss carrots, peppers, and onions together in large bowl.
Mix dressing in small saucepan. Bring to boil. Simmer just enough to melt sugar. Pour over vegetables.
Cover and refrigerate several hours before serving. This keeps several weeks in refrigerator.
