Taco Salad
From the mid-'70's. The first time we tried this salad, the recipe called for thousand island dressing. It's a wonder we ever made it again. That was totally unappealing.
List of Ingredients
- 1 pound groundmeat
- 1 onion, chopped
- 2 tablespoons chili powder, or to taste
- 1 clove garlic, minced
- pinch cumin
- 1 head Romaine, shredded
- 1/2 pound sharp or Monterey Jack cheese
- 1 onion, chopped
- 2-3 tomatoes, chopped
- 1/2 cup black olives, sliced
- Sprigs of cilantro
- 1 can refried beans, heated, or 1 can kidney beans, drained and rinsed
- A few green chiles, chopped, or 1 can chopped green chiles
- Salsa
- Sour cream
- Pico de gallo
- Tortilla chips
Instructions
- Brown groundmeat, onion, chili powder, garlic and cumin. Set aside.
- Place remaining ingredients in separate bowls so that guests may create their own salads.
Final Comments
Spicy chicken works well, too. The simple method is to stir-fry chicken breast pieces with a package of fajita seasoning. Ground venison is as good as ground beef.
