Tossed Chicken Salad
This is a knock-out salad, great for bridge luncheons.
List of Ingredients
- 1 head Romaine or 1 bag spinach
- 1 pint raspberries, blueberries, or strawberries
- 1/2 cup sliced almonds, lightly toasted (or hazelnuts)
- 2 cups mozzarella, grated or Monterey Jack cheese
- 2 cups chicken, diced
- 1 cup mushrooms, sliced
- 1/2 cup bacon crumbles
- 1/2 cup radishes, sliced
- Home-made croutons for garnish
- Dressing:
- 1/3 cup raspberry vinegar or rice wine vinegar
- 1/2 cup sugar
- 1 teaspoon dry mustard
- Salt to taste
- 1 tablespoon minced onion
- 1/2 cup canola oil
- 1 teaspoon poppy seeds
- 1 teaspoon walnut oil
Instructions
- Combine salad ingredients (Romaine through croutons).
- Combine dressing ingredients except oils. Mix well. Drizzle in oil while beating steadily. Add walnut oil last.
Final Comments
Try ham or shrimp instead of chicken.
