    Beef and Cabbage Soup

    List of Ingredients

    6-8 cups beef stock
    1 1/2 cup onions, chopped
    1 lb. white beans, cooked
    1/2- 1 cup barley
    2 cans diced tomatoes and/or
    3 roasted red peppers
    3 carrots, diced
    1/2 cup fresh parsley
    1 teaspoon oregano (1 tablespoon if using fresh)
    1 1/2 teaspoon thyme
    1 small head cabbage, chopped

    Recipe

    Mix all ingredients except cabbage and cook about an hour and a half. Add the cabbage and simmer another half hour.

    Note: This is a take-off on my vegetable soup. The main differences are the red peppers, oregano, and thyme. These give the soup an entirely new flavor.

    Dick always likes kraut added to vegetable soups, but I usually do not add it here.
