Susie's Thanksgiving Gumbo
List of Ingredients
Absolutely delicious. Susie fixed this Thanksgiving 1994. It was so good that when I made another batch, I added some of her seasonings.
Roux:
1 stick oleo
3 T. flour
Saute in roux:
2 bunches green onions
1/2 onion, chopped
1/2 bell pepper, chopped
3 cloves garlic, minced
1 lg. pkg. frozen okra
3 stalks celery, chopped
Cook until "it's a thick gooey mess." (Susie, 1994)
Add:
1 sm. can tomato paste
2 cans beef broth
1 can chicken broth
1/2 t. chile powder
4 t. Worcestershire
S & P
Tabasco
2 bay leaves
Simmer 1/2 hour.
Add and cook 1 hour:
1 lb. crabmeat
chicken (Susie used the hen she'd cooked for her Thanksgiving dressing)
Add and cook 20 minutes: 2 lbs. shrimp
Add and cook just until edges curl:
1 qt. oysters.
