    Healthy Gravy

    List of Ingredients




    Discovered by accident. This is really good.

    Roast turkey or other meat in baking bag with
    2 chopped onions
    4 ribs celery
    3 carrots
    1 cup chicken stock

    Remove meat from bag. Carefully pour vegetables and juices through strainer. Reserve vegetables and allow to cool slightly. Pour juices into spouted cup and allow fat to rise to top (or pour into bowl, let stand until fat rises, and carefully spoon off as much as possible).

    When de-fatted, pour juices and vegetables into food processor bowl. Process with 3-4 T. flour until pureed. Pour all into saucepan. Heat until thick. Add chopped giblets, hard-cooked eggs, mushrooms, etc., if desired.

    Note: This vegetable gravy is NOT fat-free. Additional fat can be removed by rinsing the cooked vegetables under running water. Also, chilling overnight and wiping the fat off the vegetables with a paper towel produce some fat reduction.
