    Mac's Grilling Sauce

    When I make this sauce, I fondly recall the friend who gave it to me. Sadly, she passed away many years ago, but the memory of her kindnesses to us when we lived in Austin return whenever we use her recipe.


    List of Ingredients


    • 1/2 cup butter, melted
    • 1 small can orange juice, undiluted
    • 3 tablespoons lemon juice
    • 1/4 cup honey
    • 1/4 cup parsley
    • 1/4 cup soy sauce
    • 1 tablespoon dry mustard
    • 2 cloves garlic, minced


    Instructions


    1. Mix ingredients and heat in a saucepan until bubbly. Brush on grilling chicken.


    Final Comments


    This is best used when chickens are slow-roasted on a spit. Pre-cook meat when grilling over a low fire.

    This may also be used for baked chicken. Bake pieces at 350 degrees, turning occasionally, until tender, about an hour. Remove chicken pieces from sauce. Pour sauce into a bowl and skim off as much fat as possible. Serve with a little sauce drizzled over chicken.

    When using a rotisserie, start chicken at least two hours before guests arrive. When we had this at Mac's, her husband would start serving drinks and THEN put the chickens on the spit. Four hours later, those of us who weren't comatose enjoyed a lovely meal. Some, however, never made it to the table.
