Tomato Gravy
List of Ingredients
1/2 pound bacon or 2 tablespoons cooking oil
1/2 cup celery
1 green pepper
1 large onion
1/4 cup flour
3-4 cans stewed tomatoes
Juice of 1/2 lemon
Tabasco
Salt and pepper to taste
Recipe
Fry bacon, if using. Crumble. Reserve 2 T. drippings. Saute vegetables. Add flour and cook 2-3 minutes. Add water to make gravy. Add tomatoes and seasonings. Simmer 30 minutes. Serve over rice or grits.
May also use pan drippings from beef or pork roasts
