Turkey Gravy from Woman's Day

This is from Woman's Day Magazine (November 1998). The recipe was delicious and it gave us all the extra gravy we needed.
4 turkey wings
2 onions, quartered
1 cup water
Canned chicken broth (1 large or 3-4 small
2 tablespoons butter
3/4 cup chopped carrot
1/2 teaspoon thyme
3/4 cup flour
1/2 teaspoon pepper
Recipe
Place wings in roasting pan, scatter onions on top. Roast wings @ 400 @ 1 1/4 hours. Place wings and onions in a large stock pot. Deglaze pan with water. Add to pot along with 1 large can or 3 small cans chicken broth, carrots, and thyme. Bring to a boil and then simmer 1 1/2 hours.
Remove meat from wings. Discard bones. Reserve meat. Strain broth (I chilled it overnight and then removed the fat). Place broth in large saucepan (I used my biggest frying pan). Combine flour and 1 small can chicken broth. Bring stock to boil, stir in flour mixture, butter and pepper. Simmer until desired consistency is reached.
May freeze up to 3 months or refrigerate 1 week. I added some of the turkey meat to the gravy (used the rest in another dish). I'll also add the drippings from the turkey I roast at Christmas--and probably the giblets.
