    Jane's Broccoli-Rice Stir-Fry

    List of Ingredients




    We all apparently adjust recipes to suit ourselves. I sent Jane a collection of rice recipes I'd found on the internet. She tried the following one:

    Broccoli Rice with Walnuts

    1/4 cup coarsely chopped walnuts or slivered almonds
    1 tablespoon oil
    1/2 package broccoli cuts
    1 tablespoon sliced scallions
    1 garlic clove, minced
    1 cup chicken broth or water
    2 tablespoons dry sherry (optional)
    1 1/2 tablespoons soy sauce
    1 cup rice, cooked

    Cook and stir walnuts in hot oil in large skillet until lightly browned; remove from skillet. Add broccoli, scallions and garlic to oil remaining in skillet. Cook and Stir 2 to 3 minutes. Add broth, sherry and soy sauce. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Fluff with fork and sprinkle with walnuts. Makes 4 servings.

    She adjusted the recipe to fit what was in her refrigerator.
    She raved about the results. Here, in her own words, is what she did.

    "I was interested in a way to do left-over rice, possibly mixing in the left over vegetables I had. Vegetables were cauliflower, carrots,and broccoli that had been marinated in a "Robust Italian Dressing and then steamed. Using this recipe, I quickly stir-fried the vegetables (had enough oil already on them), added the chicken broth, soy sauce,
    and sherry and followed the rest of the directions. Yummy!!! Even the left-overs were very good. I'll be using this part of the recipe for any left-over rice. Very flavorful. Talk to you later. Have a great day."

    So, now we have a new recipe. And it does sound good. Jane said that if she had food like this on a regular basis, she'd turn vegetarian.
