Jane's Broccoli Casserole
List of Ingredients
2 (10-ounce) packages frozen chopped broccoli. (May use fresh steamed.)
1 can mushroom soup
1/2 cup sharp Cheddar cheese, shredded cheese (I did not add)
1/2 cup mayonnaise
2 teaspoons chopped onion
1/2 teaspoon salt
dash of pepper
1 egg, well beaten
Seasoned stuffing mix to cover top of casserole.
Cook broccoli, drain. Mix rest of ingredients except stuffing mix, add broccoli. Place in casserole, sprinkle with stuffing mix. Bake uncovered at 400 degrees for 20 minutes.

From my sister Jane. She's a nurse. She tends to cook salt-free and without cheese. She probably uses low-fat creamed soups, too.
I've seen versions of this recipe, but never with the stuffing mix. That's a nice topping for this casserole. She uses white bread stuffing mix, I'm sure. I use cornbread stuffing mix. That old southern influence, you know.
I used to cook broccoli about three times a week--for years and years. We'd serve it with a little butter and lots of lemon juice. Eventually, we grew just a wee bit tired of broccoli. It's just now becoming a treat again. I cook up 2-3 bunches at a time--just to the point of it being crispy tender. This is a good casserole to use with leftover broccoli. Dick loves anything with cheese.
