Leslie's Spinach Madeleine
List of Ingredients
2 packages frozen, chopped spinach
4 tablespoons butter
2 tablespoons flour
2 tablespoons chopped onion
1/2 cup evaporated milk
1/2 cup spinach juices
1/2 teaspoon black pepper
3/4 teaspoon celery salt
3/4 teaspoon garlic salt
6 rolls jalapeno cheese
1 teaspoon Worcestershire
Cayenne to taste
Recipe
Cook spinach, drain and reserve liquor. Melt butter in saucepan over low heat; add flour, stirring until smooth. Add onion and cook until soft.
Add liquid slowly stirring constantly. Cook until thick and syrupy. Add seasonings and finely cubed cheese. Stir until melted. Combine with spinach. Serve immediately or put in casserole with buttered bread crumbs.
This is Leslie's standby. She can whip it up in minutes. It's really good.
