    My Green Fried Tomatoes

    This is also the way I like to fry eggplant and floured squash. Mom used to like brown sugar sprinkled on her green fries. Yuk!

    Recipe



    Slice green tomatoes about 1/2-inch thick. Shake in a
    bag with 1 cup flour, 1/4 cup white cornmeal, salt and
    pepper, and a pinch of cayenne, if desired.

    Heat enough bacon grease and Canola oil to cover
    bottom of skillet by about scant 1/4 inch. Heat almost to
    smoking.

    Fry tomatoes in batches without over-crowding pan.
    Fry until one side turns golden-brown. Turn and fry
    the other side. Turn only once. Drain on paper
    towels on baking racks.
