Scalloped Potatoes with Corn and Ham

Ham and Corn Scalloped Potatoes
I invented this 7/31/00. It was quite good.
White Sauce*
Sliced potatoes
1 can corn
1 onion, chopped
1-1 1/2 cups grated sharp cheese
1-2 cups ham, cut into @ 1/2-inch chunks
White Sauce
3 tablespoons butter
3-4 tablespoons flour
3 cups milk
Recipe
Make white sauce. Blend butter and flour together in a medium saucepan. Allow to cook briefly. Slowly whisk in cold milk. Stir very often until mixture bubbles and thickens. Turn heat off. Stir occasionally.
Meanwhile, peel (optional) 6-8 potatoes. Spray a baking dish with oil. Layer half the sliced potatoes, onions, corn and ham. Sprinkle half the cheese on top. Pour a bit less than half the white sauce overall. Salt and pepper to taste. Repeat layers.
Bake covered loosely with foil at 350 degrees for 50-55 minutes. Uncover and continue baking 15-20 minutes more or until potatoes are quite soft
