    Tomato-Cornbread Bake

    I invented this 7/31/00. It turned out very well.

    1 recipe cornbread, cooked and crumbled
    1 can diced tomatoes
    1 can diced tomatoes with chiles
    2 cups tomato juice
    1 small onion, chopped
    1 green bell pepper, chopped
    1-2 jalapenos, minced (opt.)
    2 cans black beans, rinsed and drained
    2-3 cloves garlic, minced
    2-3 tablespoons parsley (oregano or basil)
    1 small carton cottage cheese
    2-3 tablespoons grated Parmesan

    Recipe





    Saute onions and peppers in a little oil until tender. Spritz a deep baking dish with Pam. Make two layers with all ingredients beginning with crumbled cornbread and ending with tomatoes. Sprinkle Parmesan cheese on top. Bake at 350 degrees about 45 minutes or until juices bubble and soak into the cornbread.
