    Tomato Treats

    These recipes are so simple, I'd hesitate to submit them except that when I served the sandwiches to my friend Susie, who loves to cook as much as I do, they were a big hit. She'd never had anything like it. I guess that what makes these recipes unique is that we serve them for breakfast. They're seasonal treats--late summer when fresh tomatoes come in.


    List of Ingredients




    Open-Faced Breakfast Sandwiches

    Amounts vary depending upon servings needed:
    Cooked bacon
    Sliced tomatoes
    Sliced sharp cheddar cheese
    Bread

    Lightly toast bread. On each slice of toast, lay 2 slices cooked bacon, 1 large slice tomato (beefsteaks do best), and thinly sliced sharp cheddar. Place on a foil-lined baking sheet. Run under the broiler just until cheese melts.

    We usually have two sandwiches per person, although some of us have eaten 3-4.


    Variation: Omit bacon. Almost as good.


    Mom's Baked Tomatoes

    Per serving (multiply as needed):
    1 large, firm ripe tomato per person
    2 tablespoons soft bread crumbs
    1 tablespoon Parmesan cheese
    Drizzle olive oil

    Scoop out about a 1-inch wide hole in the top of each tomato. (Reserve scooped out portion for other purposes.) Mix together soft bread crumbs and Parmesan cheese. Spoon into cavity. Drizzle lightly with a little olive oil(or top with a pat of butter).

    Bake at 350 degrees about 45-60 minutes.

    Mom always served these tomatoes with meatloaf and baked acorn squash.

    Mom's Macaroni and Tomatoes

    I saw a version of this on the internet. It used noodles. Mom always used macaroni. This was John's favorite summer tomato dish.

    In salted water, cook macaroni until barely tender. Drain.

    In a large saucepan, cook peeled fresh tomatoes. Use enough to make about 3-4 cups. Allow tomatoes to cook until juice forms and flesh begins to break down.

    Add macaroni. Cook about five minutes. Serve with Parmesan cheese.

    John really likes this with the macaroni cooked soft. It's really better the next day. If there's any left and it's reheated several times, the macaroni eventually swells up and begins to fall apart. This is when he likes it best.
