    Since going on South Beach Diet, I've modified or invented several new recipes which are high-fiber and low-fat. This is one of my favorites.

    List of Ingredients




    2 cups mung beans, picked over and rinsed
    6 cups water
    2 tablespoons ground coriander
    1 teaspoon turmeric
    2-3 cloves garlic
    2-4 serrano chiles or 2-3 dried red chiles
    1 cup onions, chopped
    2 tablespoons grated fresh ginger
    2 tablespoons cumin
    1-2 tablespoons garam masala

    Recipe



    Combine in crockpot. Cook on HIGH 4-5 hours or Low 8-9 hours. About an hour before serving, stir in 1 package chopped spinach. Serve over basmati rice.
