Blue Cheese Stuffed Pears
List of Ingredients
6 ripe pears, peeled, halved
lemon juice
4 oz. blue cheese, crumbled
6 oz. cream cheese
2 Tbsp. port wine or sherry
1 tsp. port wine or sherry
5 Tbsp. margarine
1/2 cup chopped pecans or walnuts
white or red seedless grapes for garnish
leaf lettuce for garnish
Recipe
Brush cut sides of pears with lemon juice to prevent discoloration. In food processor or blender combine cheeses, wine, and margarine. Mix well.
Core pears, enlarging cavities to hold 1 heaping tablespoon of cheese mixture. Fill cavities with mixture, mounding slightly. Sprinkle nuts over cheese. Decorate plates or serving platter with grape clusters. Serve individually on leaf lettuce or on platter decorated with small grape clusters.
Prepare ahead and refrigerate. Remove from refrigerator 1/2 hour before serving.
