    Zucchini Almond Quiche

    List of Ingredients




    1 (9-inch) prepared pie shell
    1 1/4 cups grated Swiss cheese
    1 1/2 cups thinly sliced zucchini, crookneck or
    patty pan squash
    1 cup sliced onions
    2 tablespoons butter
    4 eggs
    1/2 cup milk or light cream
    1/4 teaspoon nutmeg
    1/4 teaspoon salt
    1/8 teaspoon black pepper
    3/4 cup sliced natural almonds

    Recipe



    Line pie shell with cheese. Saute zucchini and onions in butter until slightly golden, about 5 to 7 minutes. Spoon into pie shell. Beat together eggs, milk, nutmeg, salt and pepper. Pour over zucchini. Sprinkle almonds over eggs. Bake at 375 degrees F, 30 minutes, until filling is set and top is golden.
    Makes 6 to 8 servings.
