Grilled Salmon over Cashew Noodles
List of Ingredients
2 large pieces of salmon
parsley, chopped
dried thyme
shallots or onions
salt and pepper to taste
olive oil
Parmesan cheese
butter
carrots, snow peas, jullienned
button and Shitake mushrooms, quartered
angel hair pasta
cashews
garlic, crushed
fresh cream
fresh basil
chicken broth Recipe
Blanch pasta, set aside. Preheat grill. Prepare grill oil (Olive oil, chopped parsley, dry thyme, shallots and salt and pepper) Marinate salmon in grill oil and place on grill when preheated. Add leftover grill oil to skillet, add crushed garlic and sautee until caramelized. Sautee vegetables in garlic and grill oil. Add cashews, pasta, cream and fresh basil. Sautee these ingredients while adding chicken broth to moisten pan. Finish with butter and Parmesan cheese. Put on a large serving plate and top with grilled salmon.
